We have teamed up with Mindfulmenu to create this delicious Mothers day cake for you.
Here is the delicious recipe for our Mothers Day Orange and Almond cake
Ingredients
Oil to grease tin
2 tablespoons of granulated sugar
2 large organic oranges
6 organic eggs
250g ground almonds
250g caster sugar
1 tbsp baking powder (make sure this is a GF one)
Method
Boil the oranges until they are soft to touch. This takes around 1hr. Cool, remove any seed and puree. (can be done well in advance of baking the cake)
Grease a 23cm spring form cake tin, coat all the inside with the granulated sugar to give the cake an added crunch.
Preheat the oven to 175 oc.
Beat the eggs and gradually stir in the remaining ingredients.
Pour into the cake tin and cook at 175c for around 1 hour or until the cake is golden brown on the top and a skewer comes out clean.
Take out the oven and transfer to a wire rack to cool.
Sprinkle with icing sugar.
Once cooled cut into slices and serve with crème fraiche if desired or edible flowers
